Prosciutto and melon

I close my eyes and make myself enveloped by the scent of the fruit. The melon is extraordinary, has a scent that involves voluptuous, sensual, dare I say. And then raise your hand if you have ever eaten the melon with a slice of ham, it is difficult to find anyone who has not at least tasted. Early in my career as a host, in all the restaurants could not miss an appetizer of ham, melon, bocconcini mozzarella and pizza bianca.

Even today it is pleasant to think of these contrasts in taste between sweet fruit, melon sliced and wrapped in tender ham, mozzarella next as an accompaniment. The fresh milk and the salty cured meat, accompanied by freshly baked flour and water, that pleasure now disused.
