The dish would have been "invented" by charcoal burners, (Carbonari in Roman dialect), which prepared using the ingredients readily available and preservation. In fact, to achieve the charcoal was necessary to monitor the coal for a long time so it was important to have with them the necessary food. [2]
The carbonara in this case would be the evolution of the dish said cheese and eggs, originally from Abruzzo and Latium, that the conspirators used to prepare the day before bringing in their "haversack", and who ate with their hands.
The pepper (which has no reference or connection with soot) was already used in good quantity for the preservation of bacon, fat (or lard) is used instead of oil, too expensive for the coal miners.
