The pasta alla Norma is a dish made of pasta (usually macaroni) topped with tomato, and with the later addition dimelanzane fried, salted ricotta and basil.
This dish is from the city of Catania, in whose dialect is called Pasta Ca 'Norma.
It would seem that gave its name to the standard recipe was Nino Martoglio, the well-known playwright Catania. In front of a plate of pasta so seasoned exclaimed: "It's a standard!" to indicate the supreme goodness, comparing it to the famous opera by Vincenzo Bellini.
